Recipe ingredients and materials
This recipe for Concord wine will yield approximately 5 gallons of wine, and the following materials will have to be purchased. The items that you need are a wooden stirring spoon, a fruit press, a six gallon fermentation tank with a screw on lid, a hose for siphoning, a 5 gallon wine barrel, and nylon mesh bag. The ingredient items that you will need are, 1 gallon of water, 1 tsp of wine tannin, 1 tbsp acid blend, ¾ tsp peptic enzyme, 2 tbsp winery yeast, 6 ½ lbs. of sugar, and 40 lbs. of Concord grapes.
Adding the ingredients
The grapes will need to be washed and any stems or bad fruit will have to be discarded.Using the electric juicer, crush all of the grapes and empty them into the nylon mesh bag that lines the poly-fermentation tank. All of the grapes will need to be run through the electric juicer before the next step can be completed.After all the grapes have been processed, tie the top of the mesh bag and squeeze as much juice from the pulp into the poly- fermentation vessel. The next step will be to add the nylon mesh bag of grape pulp and all of the ingredients to the fermentation vessel with the exception of the sugar the water and the winery yeast.Bring the water to a boil on the stove and add the sugar to dissolve it, and set aside until it cools down to 75 degrees. After the sugar water has reached room temperature add it to the fermentation tank, screw the lid on, and let it sit for 24 hours.
Making the wine
When the fermentation vessel has sat for a day, open it up and stir in the yeast. Pull out the nylon mesh bag and squeeze out the juice once again from the grape pulp. Over a period of the next five days, open the fermentation tank and stir the wine with a wooden spoon daily. On the 6th day open the vessel and remove the pulp in the nylon mesh bag and discard. The wine will need to settle for a day before you siphon the wine into a 5 gallon wooden keg.Careful consideration needs to apply to siphoning the wine from the fermentation take to avoid the sediment at the bottom of the vessel. You may need to add a little water to bring the water line up to the top of the wooden keg, and you will want to place it on a rack in a cool dark area. The wine will be drinkable in two moths, but it will be at its prime after two years.
